Hurry Up Chicken Pot Pie

I've made this recipe three times... each time learning something and correcting it and I think last night I got it just about perfect. This is a modified version of Paula Deen's Hurry Up Chicken Pot Pie... tweaked to my tastes. The original recipe was for a smaller dish (this one is a 9x13) and it came out rather dry.... I think I prefer the bready-topping to the traditional chicken pot pie. Here is my version if anyone is interested. I had to type up the changes for my cookbook (I keep a word document with all my recipes in it): and figured I'd post it here as well:

Hurry Up Chicken Pot Pie

3 cups chopped cooked chicken breast
3 hard boiled eggs, diced
1 small bag frozen peas and carrots
2 (10 3/4 oz) cans cream of mushroom soup
1 1/2 cups chicken broth
salt, poultry seasoning, garlic powder, and pepper
1 1/2 cups bisquick
1 cup milk
2 TBSP melted butter

Preheat oven to 350 degrees F.

In a greased 9x13 casserole layer chicken, eggs, carrots and peas. Sprinkle with salt, garlic powder and pepper to taste and season (rather heavily- I'd guess it was at least a 1/2 tsp, just until there is a decent dusting over the whole thing) with poultry seasoning. Mix the soup and chicken broth in a small bowl and pour over layers (I also added 1/4 tsp poultry seasoning to the soup mix). Stir together biscuit mix and milk, and pour this over the casserole. Drizzle the top with melted butter and bake at 350 for 40-50 minutes or until top is golden brown.

I served this with a side of Lima Beans

A toddler's perfect day...

We'll start the day off with playtime with the cousins in the morning complete with loads of Skittles (compliments of Grammy in an attempt to get them all to sit still for a picture)...

After naptime we headed to Bridge Street to watch the boats...

Ride a little train with Grammy...

A little jump in the bouncy house by the food court and there would have been a carousel ride had it been open....

A shaved ice snack we all shared....

..and a fabulous Mexican dinner to top it all off (side note: Caden adores Mexican food, especially salsa and it doesn't matter how bad it burns, he keeps dip-diping away... and at any restaurant the lemon is a favorite treat as well.)

What a fun-filled day with family!

Caden Counts to 11

Caden has been counting on his own, unprompted usually while playing with toys/books. He has been counting to six for about 2 months now. He's still so young so we weren't/aren't in a hurry to hear him count higher but apparently he picked it up on his own! Riding in the car the other day with Nonnie and I Caden starts to count... no big deal, he does this all the time. Well, this particular time he didn't stop at 6.. he kept going, and going, and going and counted all the way to 10! No pauses, no breaks, and it was just as clear as day! I was floored and we oohed and aahed and praised him and he did it again!

So, I pulled out the camera this time to see if he would let me video it...and he wouldn't. Everything was "1, 2, 3, 4, booboo!" Silly boy. But toward the end of this clip he does count and this time to what I think is 11... however it wasn't as clear as his first and second performances, but oh well... Here is the clip we got:
